Dessert Recipes for Kids

I love dessert and so do my kids. Desserts are generally enjoyed by almost all age groups, especially by the kids. Infact kids are the greatest fans of dessert. They get more excited when it comes to cookies, cakes and fudges. They become so addicted to these sweet items that they become keener to have them all the time.

Children generally love fun foods and they take pride in participating in preparing the foods. So why not take a dish in which your kids can provide a help to you while making the food.

Cookie For Kids

In the following write up, I have described a very simple and easy going dessert recipe in which you can involve your kids too. The recipe name is Apple Cranberry Cobbler, that is not only delicious but healthy too. Serve this dish to your kids and see how their faces glow with joy.

The things required to make Apple Cranberry Cobbler are as follows: ¾ cup flour, 5 cups sliced apples, 1 cup cranberries, 2 tbsp sugar, 3 tbsp tapioca, ½ tsp grounded cinnamon, 2 tbsp melted butter, 1 ¼ cups sugar, 1 tsp baking powder, 3 tbsp milk, ¼ cup butter, 1 cup water along with salt to taste.

Instructions:

Take a big saucepan and mix apples,1 ¼ cups sugar, cranberries, tapioca, cinnamon and water. Keep them aside them for 5-7 minutes. After 5-7 minutes, you can boil the mixture on medium heat. Put the mixture in a baking dish and add 2tbsp of butter. Take another bowl and mix flour, sugar, baking powder and salt. Add ¼ cup butter and mix them well until the mixture resembles coarse crumbs. Take the milk and pour it into the mixture to make a soft dough forms. Drop this dough onto the hot apple mixture and put it in the oven to be baked for 30 minutes till you see the crust has become golden brown. You can serve the dish along with whipped topping.

Healthy Cookie Recipes - Vegan and Gluten Free

Vegan cookies, gluten-free cookies, wheat-free cookies...healthy cookie recipes are easy to make if you are willing to experiment with a few alternative quality ingredients. Agave nectar is the perfect sweetener for such baked treats. Not only because of its superiority to refined sugars, but also for its moisture-retaining qualities.

Healthy Cookie Recipes Can Be Made Without Sugar, Butter, Eggs, Or Milk!

Cookie Recipes

Let's start with a solid base of ground nuts. We can use whatever fits best our personal preferences and budget. Pecans tend to be a bit more expensive than almonds and hazelnuts (filberts), walnuts are often on sale or available at a less expensive regular price. Always buy bulk, and halves and pieces are just fine. No need to get whole nuts since we ground them up anyway.

A good cookie recipe should include some fat. As we want to keep this healthy, nutritious, and acceptable for vegans, let's forget about the butter and choose instead almond, cashew, or peanut butter, or a combination thereof. If you don't like the flavor or price of nut butters, substitute with organic canola oil.

Great, but what about the flour if we want to make gluten-free cookies? The answer is: organic brown rice flour! Works like a charm and is much healthier than white flour.

Next up: which sweetener? As stated above, agave nectar is a great sweetener for baked goods. Similar to honey, it helps retain the moisture in cookies and cakes. It also blends quickly and easily with all other ingredients for a well-mixed batter.

To add flavor to this basic healthy cookie mix, use some vanilla or almond extract, ground cinnamon, crushed anise seeds, and a pinch of salt, of course.

And to add even more nutritional value, consider lightly toasted rolled oats, raisins, sesame seeds, flax seeds, pumpkin and sunflower seeds. My goodness...what to do with all that energy?

Why This Is An Easy Healthy Cookie Recipe For Vegan Cookies And Gluten-Free Cookies

We don't really need a recipe for these incredible power morsels of nutrition. It all depends on what we have on hand, or what we like to eat, or what we want to buy. Here is a simple recipe template utilizing the ingredients discussed above:
4 cups ground nuts 1 cup nut butter or 1/2 cup organic canola oil 1 cup organic brown rice flour 3/4 cups agave nectar 1 Tablespoon vanilla or almond extract 1 teaspoon ground cinnamon 1 teaspoon crushed anise seeds, cardamom, or other spices 1 teaspoon salt Optional: 1/2 cup each raisins or toasted oats or seeds The individual ingredient quantities don't really matter that much. The template is just a general guide line. Our goal is to mix a batter that holds its shape when divided into cookie-size balls. We might have to add a little water if the mix is too dry and crumbly. Or, we might have to add more brown rice flour to a wet and sloppy batter.

This is the best part: As we are not using raw eggs, we can taste our cookie batter before we bake it off! Add more agave nectar if you like it sweeter, more spices or seeds, until you are happy!

Important points for the baking process!
Place 2-inch balls on a parchment-lined cookie pan and flatten lightly with a fork (similar to making peanut butter cookies, dip the fork in cold water before pressing it on the cookie portions) Use a fairly low oven temperature: 8-10 minutes at 300-325 degrees; agave nectar browns a little faster than sugar, so keep an eye on your cookies and don't let them get too dark on the bottom! Remember, there are no raw eggs in our batter; we won't have to bake it completely through. A lightly "under-baked" interior is wonderful! So, be adventurous and experiment with a variety of nuts, seeds, dried fruits, spices, and whatever you love in your gourmet vegan cookie. As long as you don't burn them black, they will always be good eating. And because they are so healthy and nutritious, they'll be good for you, too!

Healthier Tiger Stripe Cookies, a Chocolate Treat For Everyone

When my daughters were little I baked cookies regularly. With one exception, Oreo cookies, my kids knew little about store-bought. All of our cookies were homemade and I made one or two kinds each week. I have hundreds of cookie recipes and, like most people, nibble on raw dough and taste the cookies to see how the batch turned out.

When it comes to baking, unfortunately, I'm my own best customer. I stopped baking cookies after I gained weight. But my teenage grandchildren live with us now and they are always hungry. Grocery prices are shooting up and, to save money, I decided to bake cookies again. So I'm back to baking some of our family's favorite cookies, including Tiger Cookies.

Cookie Recipes For Kids

The recipe was originally published on the Kellogg's Frosted Flakes box. I found the recipe in "Best Recipes from the Backs of Boxes, Bottles, Cans and Jars," by Ceil Dyer. Published in 1979, my cook book is frayed, falling apart, and the pages are covered with drips. Since the cook book was published I've learned a lot about nutrition and decided to create a healthier version of Tiger Cookies.

I substituted half white, half wheat flour for all-purpose flour. This flour is heavier than regular, so I used less. For sweetness I used half Splenda and half sugar. Instead of two eggs, I used one and some egg substitute. The biggest change in the recipe was the shortening. The original recipes calls for butter or margarine. I used I Can't Believe it's not Butter! This stick margarine, a blend of soybean and canola oils, has 50% less fat than butter, 0 grans of trans fat, and 0 cholesterol per one tablespoon serving. Because I'm a vanilla nut I doubled the amount.

While these cookies freeze well, they are fragile, so put them in a plastic container, not a plastic zipper bag. A cookie and a glass of milk make a delicious after school snack. For an unusual dessert, fold broken cookies into sugar-free, fat-free vanilla ice cream. I think everyone in your family will enjoy these Healthier Tiger Stripe Cookies. My grandson's friends eat them by the handfull!

Healthier Tiger Stripe Cookies

Ingredients

1 1/4 cups half white, half wheat flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup I Can't Believe it's Not Butter! (2 sticks)

1/2 cup Splenda (regular)

1/2 cup sugar

1 large egg

1/4 cup egg substitute

2 teaspoons pure vanilla extract

3 cups frosted corn flakes, crushed to make 1 1/2 cups

6 ounces semi-sweet chocolate chips, melted

Method

Whisk flour, baking soda, and salt together. Set aside. Cream margarine, Splenda and sugar until fluffy. Add egg, egg substitute, and vanilla. Fold crushed cereal into batter. Drizzle melted chocolate chips over batter and fold in with rubber scraper, making sure to leave some streaks. (You don't want the batter to be all chocolate.) Drop by teaspoons into prepared baking pans. Bake at 350 degrees for about 12 minutes. If you are using no-stick baking pans, reduce the heat to 325 degrees and bake a little longer. Makes at least 5 dozen cookies.

Christmas Decoration Ideas for Kids (and Parents)

As a parent you already know just how much kids love the holidays. One of the things they love is helping you decorate for Christmas. Most children love to make their own handmade Christmas decorations, and there are a number of fun and exciting Christmas decorations that they can easily make.

There are a number of ways to make Christmas ornaments. Christmas ornaments can be made from regular paper or any other type of material. In fact, you can purchase a number of Christmas ornament cutouts or guides from your local craft store. These ornament pieces are likely plain, but already shaped like something, such as a star or a cross which the child can then paint. This type of Christmas decoration craft project is great for small children or those who may be making their own Christmas decorations for the first time.

Cookie For Kids

Your children can also easily make their own Christmas paintings or drawings, often with the supplies that can already be found inside your home. You can then put it on your refrigerator or you could even frame the picture and hang it up somewhere else or give it to a grandparent as a Christmas gift. You can also have the child draw on a large sheet of paper or stamp it and use it as wrapping paper. This makes a double gift. This type of Christmas decoration craft project is ideal for children of any age and is a great way to save money since you likely already have all of the needed supplies. Many newspaper offices will sell end rolls of blank newsprint which is ideal for making wrapping paper.

Another fun Christmas project that your children could do is to make a centerpiece for your dining room table, or individual place cards. You children will be thrilled if you use that centerpiece for your Christmas dinner. The children can create a somewhat elegant centerpiece, with artificial flowers, a large bowl or vase, some Christmas balls, as well as other decorative items. Your children can easily arrange these items to create their own unique centerpieces for your dining room table. If your children are a little older, they may be able to create a centerpiece in the shape of an Angel, a Santa or a Christmas tree by using construction paper and a few other small supplies.

Making a gingerbread house together is also fun. It is important that the house be constructed the day before so that the icing will have a chance to harden, but the children can have a wonderful time decorating the gingerbread house. It can even be used as a centerpiece for a Christmas display and then the children can eat it later.

Another similar idea is to take Social Tea Biscuits and make them into a small house, putting a ribbon between the seam of the roof top. It takes 7 cookies to make a house, a little Royal Icing, a ribbon loop long enough to hang over a tree branch, and some imagination to decorate it. These can be take home or eat gifts for children who visit your home around Christmas. Hang several on the Christmas tree.

There are a number of places online where you will be able to Christmas craft projects for kids. You can find a collection of ideas by performing a standard internet search. Also, your local library will no doubt have some Christmas Craft books. Your local book stores will also have a collection of Christmas craft books for children. These books tend to outline the supplies needed, as well as give detailed directions on how to make the Christmas decorations. These decorations may include Christmas drawings or paintings, tree ornaments, table centerpieces, and much more.

Regardless of which type of Christmas decorations you allow your child or children to make, they will likely enjoy the experience, especially if you participate as well. For a child, there is nothing like seeing their Christmas drawings hanging on the walls or their Christmas ornaments hanging on the tree.

Kid Friendly Enchilada Recipes

I had no idea when I became a mother that one of my greatest challenges would be cooking for my children. I have always heard how picky kids are about what they eat but I didn't realize what "picky" really meant until my son reached 4-years-old and simply refused to eat anything that wasn't chicken fingers or fruit snacks!

I frequently search for recipes and make them my own by changing the ingredients to include what I know my kids will eat. Both of my kids love Mexican food and therefore I make the following two recipes quite often.

Cookie Recipes For Kids

Easy Creamy Chicken Enchiladas

Ingredients:

2 cans cream of chicken soup, undiluted

1 package of sour cream mix

1 can of cubed cooked chicken

4 oz. can of diced green chilies

8 corn tortillas

1 cup of shredded cheddar cheese

Directions:

1. In a medium saucepan, mix all ingredients together and cook over medium heat for 15 minutes. Stir constantly.

2. Spoon some of the mixture into each tortilla and roll the tortillas.

3. In a 13-in.x 9-in.x 2-in. casserole dish, place the tortillas in a row.

4. Pour the remaining mixture over the tortillas.

5. Top with shredded cheese.

6. Bake uncovered at 350F for 20-25 minutes and the cheese on top is melted.

Serves 4.

Enchilada Pie

Ingredients:

1 lb. hamburger

8-10 corn tortillas

10 oz. can enchilada sauce

8 oz. can tomato sauce

4 oz. can chopped green chilies

8 oz. shredded cheddar cheese

¼ cup water

Directions:

1. Cover bottom of 12x12 (or similar size) baking dish with torn tortillas.

2. Brown hamburger and drain.

3. Mix hamburger with enchilada sauce, tomato sauce, chilies, and water.

4. Pour half of the meat mixture in dish on top of the torn tortillas and top with cheese.

5. Repeat layer by adding torn tortillas, meat mixture and top with cheese.

6. Bake uncovered at 350F for 20-30 minutes.

Serves 4.

Both of these enchilada recipes taste great with a green salad and my recipe for crunchies, which my family loves.

To make crunchies you will need:

6-10 corn tortillas

Frank's Hot Sauce

shredded cheddar cheese

Directions:

1. Tear the tortillas into bite sized pieces or desired size and place on a cookie sheet.

2. Top each piece of tortilla with shredded cheese and drizzle with hot sauce.

3. Broil tortillas at 400F until cheese is melted and the tortillas are crispy.

Please note: Carefully watch the crispies while they are baking because they cook very fast and will burn. Due to the variations in ovens, you may need to adjust the broil temperature on your oven to cook the crispies correctly. I would suggest baking a sample batch to help you learn the best temperature to use and required baking time.

Ingredient List

½ pound of ground chicken

1 ½ tablespoons of vegetable oil

4 cups of white rice

1 diced carrot

¾ cup of diced green beans

Cooking Instructions

1. Brown the chicken in a pan with 1 tablespoon oil. Drain out extra fluids.

2. Steam the rice

3. Sauté the green beans and carrots with ½ tablespoon of oil

4. Mix all ingredients

5. Make sure to allow the mixture well

6. Allow mixture to cool and serve

Delicious Dog Pizza

Ingredient List

Pre-made pizza dough

1 ¼ cut of diced cooked turkey

¼ cup low sodium turkey broth

½ cut of chopped spinach

1 cup of grated mozzarella cheese

Cooking Instructions

1. Heat oven to 375 F

2. Grease a cookie sheet

3. Spread the pizza dough onto a cookie sheet

4. Pour the turkey broth over the dough

5. Add the turkey, cheese and spinach on top

6. Bake for 12-15 minutes

7. Allow pizza to cool before serving to your dog

Homemade Dog Biscuits

Ingredient List

2 cups of unbleached wheat flour

1 cup of cornmeal

1 whole egg

2 ½ tablespoons vegetable oil

½ teaspoons chopped fresh parsley

¾ cup of low-sodium chicken broth

Cooking Instructions

1. Heat your oven to 400 F

2. Mix the flour and cornmeal in a bowl

3. Mix the egg, oil and chicken broth in a separate bowl

4. Combine both bowls together and mix until you have a dough like consistency

5. Roll the dough into about a ½ thickness

6. Use cookie cutters to cut the dough into cool shapes

7. Bake for 15 minutes

8. Make sure biscuits are cool before serving

Modern Superman Party for the Kids

The classic super hero, Superman and has been remade many times of the years along with his many other super hero friends like Superwoman, Supergirl, Batman and Robin, and even the Flash. He's gone from the Kansas farm boy to the big city reporter and back again in many recent Superman shows. Old Fashioned Sour Cream Sugar Cookies and Nina's Sugar Cookies

What can be more fun than baking delicious cookies? Eating them, I suppose. Here are some recipes from my vintage recipe collection for easy and delicious sugar cookies. These are perfect for holidays, birthdays, rainy days, or just spending time baking with the kids, other family or friends. So get out those cookie sheets and get them filled some delicious cookie dough. Just imagine the aroma in your kitchen...oh, yummy!

NINA'S SUGAR COOKIES

Cookie Recipes

1 cup margarine

1 cup vegetable oil

1 cup powdered sugar

1 cup granulated sugar

2 eggs

4 cups flour

1 tsp cream of tartar

1 tsp baking soda

1 tsp vanilla

Preheat oven to 400 degrees.

Mix margarine, oil, sugars, and eggs together in a large mixing bowl. Sift flour, cream of tartar and baking soda together. Add to the egg mixture and mix well. Mix in the vanilla. This dough will be very sticky. Divide into 3 equal parts and make into rolls. Put into freezer and allow to freeze. Remove from freezer and slice into 1/4-inch thick slices. Sprinkle with colored sugars, if desired. Bake on a ungreased cookie sheet at 400 degrees for 10 minutes.

SOUR CREAM SUGAR COOKIES

1 cup shortening
3 cups sugar
2 eggs
1 cup sour cream
1 tsp soda
5 1/2 to 6 cups flour
4 tsp baking powder
1 tsp salt

Preheat oven to 350 degrees.

Cream shortening. Add sugar and continue creaming until light. Add eggs and sour cream and beat. Sift the dry ingredients together and add to the shortening-sugar-egg-cream mixture. Form dough into walnut sized balls and roll in granulated sugar. Place on greased cookie sheet and flatten with the bottom of a glass. Bake in 350 degree oven for 10 to 15 minutes.

NOTE: For holidays, use tiny drops of liquid food coloring in the sugar before rolling the dough balls in it. Red and green coloring is perfect for Christmas, orange for Halloween, orange and brown for Thanksgiving, pastels for Easter, red for Valentine's Day, etc.

Groovy Kids Cakes - 5 Types of Icing For Perfect Cakes

Nothing puts a smile on a childs face like viewing their birthday cake for the first time. And lets face it, few things out there are as satisfying for us mothers either.

Decorating a special cake for your child can be so much fun. For our girls, whimsical themes and gelati colours are in order, and for our boys, bright, bold and colorful is all it takes to make a little man smile.

I categorize icing into 5 main types, and each one has its place in the cool cakes for kids arena. Understanding the types if icing will help you successfully plan your groovy cake design and save you a lot of heartbreak.

#1: Buttercream

Buttercream icing is a combination of softened butter, fine sugar and some sort of liquid flavor and coloring. It is essential to use a fine sugar when making buttercream icing as it melts very easily and importantly, contains small amounts of cornstarch which helps to stabilize the icing...This also explains why it doesn't taste so good in coffee!

Buttercream icing is so easy to work with as it's smooth consistency makes it so suitable for use with piping bags. It is the perfect icing for little cupcakes as you can get it through the piping bag tips with only one hand, allowing you to hold and manoeuvre the cupcake with the other.

#2: Ganache

Ganache is a fancy French term that simply means chocolate melted with heavy cream. When warm you can pour it over the cake for a gorgeous shiny glaze, just watch your chocolate loving child's eyes pop from their little faces as they peer over the counter top as you do this, its so cute. Ganache is so versatile, you can use it as a chocolate sauce for a pudding, dip strawberries in it, or just lick it off the spoon. You can make ganache into a frosting if you chill for a bit then beat it till fluffy, perfect for layer cakes.

Best of all though, make sure that you pop a tiny bit of the ganache into the fridge for later. Once it has chilled you can scoop out little spoonfuls, roll into balls and dip into melted chocolate for yummy after party truffles just for you.

#3: Glaze

Glaze is the simplest of icings. It is simply some fine sugar, melted over boiling water with a little bit of liquid flavour, usually fruit such as a squeeze of lemon or scoop of passion fruit. It forms a very thin liquid consistency and is simply drizzled over the cake to form a hard crust when it cools. i love the way it cracks when you bite into it, yum.

#4: Royal Icing

Royal icing is one of the most commonly used icings in cake decorating, it contains powdered sugar, egg whites and liquid. Its consistency should be similar to pancake batter and needs to flow easily in order to work it through a piping bag. You need to be quite confidant with your icing skills when using royal icing though as it sets very quickly.

#5: Fondant Icing

When it comes to really groovy cake designs fondant icing is my personal favourite due to its amazing versatility. You can make some seriously cool cakes with this as once made it is rolled out like pastry allowing you to cover cakes of all shapes and sizes. You can cut out shapes with cookie cutters, you can dye or even paint it with liquid food coloring, and as such the possibilities are endless. Fondant icing can be tricky though, sometimes having the tendency to sweat, so working at the right temperature is really important.

Finding suitable places for kids holidays is not always easy. You cannot take them just anywhere; there are a wide range of factors to take into account before you select your holiday destination.

Reviews are often available on accommodation websites etc. - especially ones that allow reviews to be added to online listings. The description in most cases will be accurate, but other factors are sometimes not mentioned. For example, is the accommodation near to any nightclubs or bars? If so, you and your little ones might find that getting good quality sleep is much more difficult. Also, you should find out if there will be a lot of families staying in the same resort or hotel - as if there are too many young revelers you may find the noise level is unacceptable.

Another very important factor for those with kids is activities. While adults are often quite happy with a few good restaurants and some attractive beaches, children often want something more. Attention spans of younger holiday makers can be quite short and so you need to have plenty of things ready to do. Things like theme parks are expensive, but can certainly make kids holidays significantly more memorable and enjoyable. Going to a theme park can take up all day and could help avoid paying for lots of small activities.

Cake and Cookie Baking Tips for Beginners

Are you new to baking cakes and cookies? Not sure how to read and follow recipes? Here are some baking tips to get you started.

All ingredients should be at cool room temperature.

Cookie Recipes

Unless the recipe states otherwise, use unsalted butter. If you have only salted butter on hand, reduce the amount of salt in the recipe by 1/4 teaspoon per stick of butter. Use regular butter, not whipped, and don't substitute margarine unless the recipe gives it as an alternative.

Unless otherwise stated, eggs used in baking recipes should be the large size.

Use dry measures for dry ingredients and wet measures for liquid ingredients. Measuring cups for dry ingredients come in individual sizes (1/4 cup, 1/3 cup, 1/2 cup, 1 cup). You fill the cup completely with the flour or other dry ingredient and level it off. Liquid measures are marked with lines for various amounts (1/3 cup, 4 ounces, etc.), with some space at the top so the liquid doesn't spill. You pour the liquid in up to the desired line.

To measure flour, stir up the flour, then swoop the measuring cup into the flour, and level the flour even with the top of the cup using a knife or the side of your hand. To measure sugar or cocoa, spoon it into the cup. To measure brown sugar, spoon it into the cup and pack it down with the back of the spoon. When measuring sticky ingredients such as molasses or honey, lightly oil the inside of the cup first.

You must sift flour for cakes and confectioners' sugar when you're using it in icing. For cakes, sift the flour, measure it, then sift it again with the dry ingredients. You don't need to sift flour for pies or most cookies.

Chocolate must be melted over low heat or it will burn. You can melt it in the top of a double boiler (a pan with two parts; the top sits in the bottom pan, which contains boiling water). You can also put it in a microwave-proof container and heat on 80 percent power for 1 minute. It should still be lumpy when you remove it; keep stirring until it is smooth. If it is still lumpy, return it to the microwave and heat in 10-second increments on 80 percent power until smooth.

To cream butter (with or without the sugar), beat it at high speed on an electric mixer for about 2 minutes, or until it is fluffy.

If a recipe tells you to fold in egg whites or cream, it means to spoon the egg whites or cream over the batter, then move a rubber spatula in a circular motion from the bottom of the bowl to the top of the batter, "folding" in the whites or cream. You can also use a wire whisk to gently whisk in the eggs or cream.

Use the size of pans indicated in the recipe.

Always turn the oven on for at least 15 minutes before you will be using it, so it has time to reach the proper temperature.

Baking (cookie) sheets come with and without sides. Some recipes refer to a baking sheet with sides as a jelly-roll pan. Cookies bake the most evenly on a cookie sheet without sides, but it's OK to use one with sides.

Space drop cookies at least 1 1/2 inches apart on the baking sheet so they have room to spread.

Most cookies should cool on the baking sheets for a minute or two to "set" before they're removed to wire racks to cool completely. Cakes should cool completely in the pan before being inverted onto a plate or cardboard round. Run a knife between the cake and the sides of the pan first to loosen it.

How Can a Diabetic Enjoy Banana Cake? With These Recipes For Chocolate Banana Cake & Yummy B Cake

Here are a couple of recipes for diabetics to enjoy banana cakes. Choose from Chocolate Banana Cake and/or Yummy Banana Cake. Note: The first recipe does contain a small amount of sugar. Keep this in mind when incorporating this cake into your diet. This should be a good cake recipe for most diabetics. As always, eat sweets after a meal that has contained protein. And eat only a small piece. Over indulging will almost always cause a spike in blood sugar!

CHOCOLATE BANANA CAKE

Cookie Recipes For Kids

1 cup all-purpose flour
1 tsp baking powder
1/4 tsp ground cinnamon
2 tbsp butter
1 egg beaten or 1/4 cup egg substitute
1/2 cup brown sugar
1/2 cup Equal-Sugar Lite
1/2 tsp salt
1/4 cup & 3/4 cup unsweetened cocoa powder
1/2 cup mashed banana
1 tsp vanilla extract
1/4 cup water
1 1/4 cup boiling water

Preheat oven to 350 degrees. In a large mixing bowl combine flour, Equal, baking powder, salt, cinnamon and the 3/4 cup cocoa powder.

In a 1-quart saucepan melt butter over medium heat. Remove from heat and stir in banana, egg, vanilla, and 1/4 cup water, stirring until blended. Stir in flour mixture just until blended. This mixture will be thick. Spoon into an ungreased glass 8" x 8" baking pan, spreading evenly.

In same bowl, with a wire whisk, beat brown sugar, 1/4 cup cocoa and boiling water until blended. Pour over chocolate batter. DO NOT STIR!

Bake 35 minutes; should have some fudgy sauce on the top. Serve warm.

Makes 8 servings.

YUMMY BANANA CAKE

2 1/2 cups cake flour
1 tsp baking soda
1/2 tsp baking powder
3/4 cup butter
1 1/2 cups Equal Sugar-Lite
2 eggs
1/4 cup buttermilk
1 1/4 cups finely mashed ripe bananas
1 tsp vanilla extract

Preheat oven to 375 degrees. In a large mixing bowl, stir baking soda and baking powder into flour. Set aside. Cream butter and Equal together until smooth. Add to the flour mixture. Mix in eggs, buttermilk, bananas and vanilla. Mix together until well blended. Pour into a 9x13-inch baking pan that has been sprayed with a non-stick vegetable oil spray. Bake 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Topping: Place 2 tablespoons of cornstarch and 3/4 cup Splenda Granular in blender. Blend until a very fine powder. Using like you would powdered sugar, sprinkle over top of cake Store any leftover in an airtight jar.

The only kind of recipe that may be more common than peanut butter is sugar cookie recipes. Sugar cookies are the ultimate "simple sweet," without much flavor of their own other than the sugar and a light, pleasing texture that makes it possible to munch them by the handful.

During holiday time, when everyone's cookie factories crank up in their home kitchens, sugar cookies are turned out by the tens of dozens. Because the dough is so simple to make, large batches are usually prepared at once and kept refrigerated until it's time to dish them onto the baking sheet. Some people even make the dough weeks ahead of time and freeze it until it's time to bake, although the results from that can be mixed.

Cookie Recipes

This year, before holiday time, do a little experimenting. Sugar cookie dough is cheap to make, so you won't be risking any major investment doing so.

First off, try some flavorings. Almond extract is a great flavor to try, just a teaspoon or so per batch. For an extra special touch, place a slice of almond on top of each cookie right when they come out of the oven, while the top of the cookie is still hot and a little bit sticky.

Vanilla is a classic flavor, as is lemon. In fact, many sugar cookie recipes have lemon or vanilla extracts already listed as ingredients. For a change of pace, try amaretto, peppermint or any other extract you'd like to explore. The only limit is your imagination.

Add-ins are another great way to explore. Be careful here, though. Sugar cookie dough isn't as durable as chocolate chip cookie dough, so you can't cram in quite the volume of extras you would normally. But that's fine, as you want the flavor of the cookie to come through with your addition. Try chopping up dried or candied fruits to add flavor and color. A little ground or chopped almond, pecan or walnut is also a great choice. Again, your options are as varied as your creativity can make them. Don't be afraid to explore!

Does your child love tuna? If so, and you're tired of making yet another ordinary tuna salad sandwich what about making up some fun tuna swirls, muffins, pasta salad and 'Sunflower' twist on your standard tuna salad recipe?

Here are some of my favorite ways to serve up tuna in a kid lunch:

Cookie Recipes For Kids

Tuna Swirls

Ingredients

1 can tuna, drained

2 tbsp. mayo

1/2 small onion, chopped

1 sweet pickle, chopped

splash of lemon juice

3 slices of whole grain bread

dab of butter or margarine

Combine tuna, mayo, onion, pickle and lemon juice in a bowl. (Can be prepared the night before and refrigerated.)

Cut the crust of the bread. Gently flatten each slice with a rolling pin. (Don't roll too hard or you may tear the bread.)

Spread a thin layer of the tuna mixture on the bread. Roll up. Spread a little butter or margarine on the seam to seal it.

Tuna Melt Muffins

Ingredients

1 can tuna, drained

2 tbsp. mayo

1 cup chopped pickles

1/4 cup medium cheese, grated

1 English muffin, split in half and toasted

Combine tuna, mayo, pickles and cheese. Spread on one side of a toasted English muffin and top with other side to make a sandwich. Let cool. Wrap up in plastic or seal in a container.

You can also make the tuna mixture the night before, cover and refrigerate until morning when you can assemble into a tuna melt muffin sandwich.

Tuna Sunflowers

Ingredients

1 can tuna, drained

1/2 cup shelled sunflower seeds

1 small onion, chopped

1/2 tsp. basil, dried

1/2 cup yogurt, plain

2 slices of whole grain bread

Combine tuna, sunflower seeds, onion, basil and yogurt. Cool mixture long enough for it to set (approx. 20 minutes).

Using a flower shaped cookie cutter, cut out a flower from each slice of bread. Spread the mixture on one half. Top with the second half.

If you have a small circular cookie cutter you may wish to cut out the middle of one slice so you can have an open middle and the sandwich when assembled looks like a sunflower.

Tuna Pasta Salad

Ingredients

2 eggs, hard cooked, chopped

1 cup broccoli florets, chopped

1 tomato, chopped

2 cups shelled pasta

1 can tuna, drained

1/2 cup red bell pepper, chopped

1/2 cup green onions

1/4 cup ranch dressing

Combine ingredients. Toss to coat. Pack in containers and refrigerate.

Everyone loves a great party, especially kids. Birthdays mark milestones in a child's life and each one should be a memorable event. Just remember to make the activity age-appropriate. It is also a good idea to offer smaller-scale activities for children to participate in as they arrive at the party. Hold the big activity after all the guests are present.

- 1/2 cup of desiccated coconut

Method:

1. Melt both chocolates in separate bowls (either melt over a "bain marie" or double boiler, or microwave for approximately 30 seconds) until soft and smooth.

2. Mix coconut and rice puffs together in a bowl. Pour the dark chocolate over and mix thoroughly.

3. Line a shallow baking dish and pour mixture evenly.

4. Pour the white chocolate around the mixture. With a large spoon, gently and roughly mix the white chocolate into the mixture to create a desired marble effect. (Try not stir and mix the colors in too much).

5. Refrigerate to harden for 1 hour or about 10 minutes in the freezer. Cut into square sizes as you desire. (Store in air-tight container in cool temperatures. Refrigerate for warmer climates).

RECIPE #2: "Classic Jam Drop No Bake Cookies"

Ingredients: (makes approximately 2 to 3 dozen cookies)

- 2 1/2 cups of wholemeal cereal, lightly crushed (or 2 cups of oatmeal if preferred)

- 2 tablespoons of honey

- 1 cup of softened butter

- 1/2 cup of icing sugar

- Strawberry (or any fruit) jam

Method:

1. Mix butter, icing sugar and honey together until smooth.

2. Stir in the cereal carefully and thoroughly.

3. Place a large waxed paper on a flat baking dish and spoon the mixture on to the paper in small serving amounts. Lightly pat the small mounds down.

4. Add a small (about half to one teaspoon) of your favorite fruit jam in the centre of the cookies.

5. Refrigerate for at least 30 minutes or about 10 minutes in the freezer before serving. (Store in air-tight container in the fridge).

RECIPE #3: "Almond Delight No Bake Cookies"

Ingredients: (makes approximately 1 to 2 dozen cookies)

- 2 1/2 cups of rice puff cereal (can be honey glazed styles)

- 100g roasted almonds (finely chopped) or almond flakes

- 100g milled almonds (or almond powder)

- 1/2 cup of softened butter

- 1 table spoon of honey

- vanilla essence

Method:

1. Mix butter, milled almonds, honey and a couple drops of vanilla essence together until smooth.

2. Mix rice puff and roasted almonds together and pour into the butter mixture. Mix thoroughly.

3. Spoon mounds onto waxed paper and refrigerate at least 30 minutes or about 10 minutes in the freezer before serving. (Store in air-tight container in the fridge).

What you will need:

2 cups brown sugar 1 1/2 lbs sweet potato 2 limes 1 stick cinnamon 1 cup heavy cream 1 teaspoon salt 3 egg yolks 1 tablespoon butter 1 tablespoon vanilla extract 1/8 teaspoon ground cinnamon or grated cinnamon stick Water, as needed How to make it:

Peel and chop the sweet potato and cover it with water in a pan. Add a teaspoon of salt and boil it for twenty minutes or until tender. Drain the potato and mash it using a fork, blender, or food processor.

Peel the limes and save the fruit for another use. Put the peel in a big pan with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over a moderate heat until it reaches 250 degrees F, stirring it all the time. You will need a candy thermometer to gauge the temperature.

Take out the peel and cinnamon and turn the heat down to low. Add the mashed sweet potato and keep stirring the mixture until it is smooth. Take it off the heat. Beat the cream, butter, egg yolks, and a pinch of salt until smooth, and then add this to the sweet potato mixture.

Cook it over a low heat for a couple of minutes, then take the pan off the heat and stir in the vanilla. If the mixture is too runny, you can mix a quarter cup of cornstarch with a quarter cup of water and add this. Divide the sweet potato pudding between serving bowls and garnish each one with a little ground cinnamon.

Refrigerator Cookie Recipes

I remember getting excited whenever we would get a box of Velveeta because that meant we would be getting one of mom's refrigerator cookie recipes. She would always put the refrigerator cookies in the Velveeta boxes in the refrigerator. Probably a use for those boxes that we would never even think of today. It, of course, makes the cookies square, which allows for easier packing into containers. It also means that you do not have to mess with trying to get the cookies into a perfect roll. Also no danger of the kids putting something on top of the cookies and smashing them. I always liked coconut so the oatmeal refrigerator cookie recipe was one of my favorites.

Oatmeal Refrigerator Cookies

Cookie Recipes For Kids

Cream together the sugars and the shortening in a large bowl. Add the eggs and vanilla to the creamed mixture. Sift the dry ingredients (flour, baking soda, and salt) into the creamed mixture. Mix in the oatmeal, nuts, and coconut. Put wax paper or plastic wrap into Velveeta boxes and push the cookie mixture into the boxes. Refrigerate the cookies overnight. The next day take the refrigerator cookies out and slice them (about 1/8 inch thick). Then place the cookies on cookie sheets and bake in a 375 degree oven for 10 minutes.

Peanut Butter Refrigerator Cookies

Mix together the butter and peanut butter in a large bowl. Add the brown sugar to this mixture. Add in the egg and mix well. Alternate adding the dry ingredients (flour, salt, and baking soda) with the evaporated milk. Put wax paper or plastic wrap into Velveeta boxes and push the cookie mixture into the boxes. Refrigerate the cookies overnight. The next day take the refrigerator cookies out and slice them (about 1/8 inch thick). Then place the cookies on cookie sheets and bake in a 375 degree oven for 10 minutes.

If you work outside of the home, this is a great cookie recipe to throw together on Friday night. Then you can have a fun time baking the cookies with your kids on Saturday.

Macadamia Cookie Recipes - Easy & Quick To Prepare!

Cookie Recipes For Kids

>> Macadamia Shortbread Cookies

1 c macadamia nuts (4 oz)

1 c all-purpose flour

1/4 c cornstarch

3/4 c unsalted butter; softened

3/4 c confectioners' sugar

Finely chop the macadamia nuts. Sift flour, sugar and cornstarch. Stir
in nuts. Beat butter in bowl at medium speed until creamy. At low speed, beat in flour mixture. Using a level tablespoon, shape dough into balls. Place 2 inches apart on un greased baking sheets. Flatten each ball with a fork. Bake in preheated 300 degree oven 25 to 30 minutes until just lightly browned around edges. Cool baking sheet on rack 5 minutes. Transfer cookies to rack to cool.

Variations: press half a macadamia nut into each cookie before baking.
Sprinkle with rock sugar upon removing cookies from oven.

1 c butter; softened

1 c confectioners' sugar

1 ts vanilla

1/2 c chopped macadamia nuts

1/4 c finely ground macadamia nuts

1/4 ts salt

1/4 c granulated sugar

2 c all-purpose flour

2 c coconut flakes

Sift flour, measure, and sift again with salt. Set aside. In a large
bowl, cream butter, then add granulated sugar and cream again until
thoroughly blended. Add vanilla. Gradually beat sifted flour into creamed mixture until smooth. Mix in coconut and macadamia nuts. Shape dough into a roll 1 1/2 inches in diameter and wrap in clear plastic wrap.

Refrigerate at least 6 hours or overnight. Slice roll at 1/4-inch intervals and place rounds on greased baking sheet. Bake at 300 degrees for 20 minutes. Sift confectioners' sugar onto waxed paper, reserving about 1/3 cup, and transfer baked cookies to it. Sift tops lightly with remaining sugar. Let cool completely before storing in cookie tins.

Makes about 3 1/2 dozen.

Ingredients:

1 cup sugar

2 Tablespoons flour or cornstarch

1/4 teaspoon salt

4 Tablespoons cocoa

2 cups milk

5 egg yolks, beaten (reserve whites for meringue)

3 Tablespoons butter

1 1/2 teaspoon vanilla

Directions:

In a medium saucepan, combine flour, sugar, salt and cocoa. Gradually stir in milk. Cook and stir over medium heat until bubbly, then cook an additional 2 minutes. Remove from heat and stir a small amount of egg yolks into the hot mixture. Stir in the remaining egg yolks, and cook for 2 minutes stirring constantly. Remove from heat and add butter and vanilla. Pour mixture into a baked and cooled 10 inch pastry shell. Spread meringue over pie and bake at 350 degrees for 12 to 15 minutes or until meringue is golden brown.

Meringue

Ingredients:

4 egg whites, room temperature

1/2 teaspoon vanilla

1/4 teaspoon cream of tartar

6 Tablespoons sugar

Directions:

Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff and glossy peaks form. Spread meringue over hot filling and seal to edge of pastry. Bake according to directions above. Refrigerate any leftover pie.

Fun Things For Kids - Cookie Exchange at Preschool

Last year I had my first experience with Preschool. I have to say that at every turn I seemed to not be quite with the program when it came to the holidays and the treats or gifts that went with each one.

Halloween - My child got a goodie bag from each of the children in her class. We did not hand out any. We didn't know that we needed to.

Cookie For Kids

Thanksgiving - My child got a small gift from her teacher. We did not give her teacher anything. I didn't realize that Thanksgiving was a gift giving holiday in school.

So, 10 weeks into the school year I am feeling very guilty about not knowing the protocol for holidays and gifts. I was determined to make amends in the upcoming holidays.

Christmas - My child got a gift bag from her teacher and a gift or card from each child in her class. I sat up until the wee hours of the morning with little foam stockings, foam letter and ribbon making a little personalized tree ornament for each of my daughters classmates. I also made a little picture frame for her teacher and included a picture of the two of them from the beginning of the year. Whew, I think that I did OK on that one.

Valentine's Day - My child got a Valentine...AND a bag of treats...from each student in the class. I sat down with my child to help her print out 15 Valentine's Day cards. She had to write TO: their name and FROM: her name. She is not great at printing small letters so she would run out of room...cry because it was wrong...start all over again. Good thing we had 2 boxes of cards. I also had to do 15 cards for my 2 year old. I did not know to send goodie bags for this one though.

Easter - My child got Easter treats from her teacher. She gave her teacher a special picture that she had colored. I hope that was good enough.

End of the Year - OK, this was the big one. My child got a gift bag and card from her teacher. I had gone out and bought a small set of candles () for her teacher and the assistant. We also had to buy for my son's teacher and assistant, the music teacher and the preschool director. I tried to pick out something that I would like as a gift from a student.

So, what conclusion did I come to? The expectations for gifts in PRESCHOOL (where we live) are ridiculous. Did I mention that I was the one doing all the work for the gifts that she was going to give out? Oh yeah, then there is the fact that all this gift giving can get a little costly!!

I am boycotting any gift giving this year. We are making cookies. All kids love cookies right?

For Halloween we made special cookies for the class. I bought the ones that come out of the "can" and have the Halloween decorations already in them. It couldn't have been easier.

Didn't have to do Thanksgiving because we were going out of town J Bonus for me!!

My enlightened moment came when I was contemplating what to do for Christmas. This is no way that I am going to have time to be "crafty". We are going to have a COOKIE EXCHANGE in each of the kid's classrooms!!!

Here is how it will work:

Each child will bring 2 dozen of their favorite cookies.

Now, I realize that the moms are going to have to do some work here but it will be faster than making decorations and cheaper than buying a gift. The great thing is that you can do this with your kids. My kids love to cook with me. There is always a mess to clean up but there are always smiling faces at the end of it. OK, back to the great idea!!

On the cookie exchange day the parents will send their child to school with the cookies and a plastic container with a lid.

The children will set out their cookies on a table and then go around the table with their plastic container taking 1 cookie of each kind until all the cookies are gone. They can put the lid on the cookies and bring them home. They can think of their friends and enjoy cookies over the entire Christmas Break.

I will get my daughter a package of Christmas cards so that she can write one for each of her friends and her teacher. Her printing is so much better this year but I will get big cards just in case J. There, the "gifts" are done.

So, I have saved myself time and money and therefore my sanity will still be in tact at the time of year I need it most.

I hope that many of you moms can relate to what I went through last year. I just don't want to be the only one who feels like an idiot for messing up the gift and card thing. Please use this cookie exchange idea. Claim it as your own idea J I won't mind a bit. Just promise me that you will let me know how it all goes.

Simple Children Cookies - Recipe That Tastes Great

When you think of recipes for children cookies you probably think "easy" & "tasty," right? I certainly do. Sometimes you are in the mood for an elaborate grown-up cookie, but there are definitely times when all you want is an easy to make recipe for children cookies.

Here is a tasty and simple children cookie recipe:

Cookie For Kids

1/3 cup butter 1/3 cup shortening 2 cups flour 1 egg 1/2 cup sugar 1 tablespoon milk 1 teaspoon baking powder pinch of salt 1 teaspoon vanilla candy sprinkles

Mix the butter and shortening. Add 1 cup of the flour, egg, sugar, milk, vanilla, baking powder, and salt. Beat until mixed. Add the rest of the flour, mix together and cover. Place in the refrigerator.

Roll the dough to 1/16 - 1/8 of an inch. Depending on your mood, you can cut the cookies into fun shapes with your child or you can use pre-formed cookie cutters.

Bake at 375F for 6-8 minutes.

Let cookies cool on racks and then sprinkle lightly.

Voila, you are done! And the best part of all is that children cookies are easy to make!

But wait, I want more!

If you are feeling a little more ambitious there are some additional ingredients or tweaks you can make. If your child likes peanut butter, and most do, then try spreading a little peanut butter on the cookie and drizzle some honey on top of that. Sounds out there, right. Don't worry, your child will probably love it!

Drop Cookie Recipes For Diabetics

Most of you diabetics know that all our sweets cost more in the stores than the regular sweets do. If you are tired of buying the more expensive cookies, or you pass them up to save money, try these quick and easy Oatmeal Raisin Cookies that are sweetened with orange juice or the Orange Drop Cookies. The Orange Drop Cookies do have a small amount of sugar so remember that when adding these to your diet.

OATMEAL RAISIN DROP COOKIES

Cookie Recipes For Kids

1 cup all-purpose flour

1 cup uncooked rolled oats

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp baking soda

1/8 tsp ground cloves

3/4 cup frozen apple juice concentrate, thawed

3 tbsp egg substitute

2 tbsp margarine, melted

2 tsp vanilla

1/2 cup raisins

Preheat oven to 375 degrees. Spray baking sheets with nonstick cooking spray. Combine flour, oats, baking powder, cinnamon, nutmeg, baking soda, and cloves in a large bowl. Combine remaining ingredients in a medium bowl; blend well. Add to dry ingredients; blend well. Cover and refrigerate for 20 minutes. Remove from refrigerator and drop 2 tablespoonfuls dough 2 inches apart onto prepared baking sheets. Bake 20 minutes or until lightly browned. Cool completely on wire racks.

Yield: 28 cookies

ORANGE DROP COOKIES

1 cup butter, softened

1 1/2 cups Splenda

1/2 cup sugar

3 eggs

1/3 cup unsweetened orange juice

1 tbsp grated orange peel

4 cups flour

2 tsp baking powder

1 tsp baking soda

In a mixing bowl, cream butter, sugar, and Splenda together. Beat in eggs, orange juice, and orange peel. Combine the flour, baking powder, and baking soda. Gradually add the flour mixture to the creamed mixture and mix well. Drop by teaspoonfuls 2-inches apart onto greased baking sheets. Bake at 350 degrees for 12 to 14 minutes or until edges begin to brown. Remove to wire racks to cool.

Yield: 8 dozen

Note: These cookies do contain a small amount of sugar. Remember this when working them into your diet. Do not over indulge!
