1/3 c. plain flour

1/4 tsp. baking soda

1/4 tsp. baking powder

Pinch of salt

2 tbsp. shortening

2 tbsp. peanut butter

1 tsp. Sweet 'n Low

1 egg, beaten

Mix and stir all ingredients in order (flour, baking soda, baking powder, salt, shortening, peanut butter and Sweet 'n Low). Add beaten egg and mix well. Drop by large teaspoon on greased cookie sheet. Bake at 350 degrees for 10 minutes.

DIABETIC FUDGE

1 14 1/2 oz. evaporated milk

3 tbsp. cocoa

1/4 c. oleo

Liquid Sweetner to equal 1/2 c. sugar

1/4 tsp. salt

1 tsp. vanilla

2 1/2 c. graham cracker crumbs

1/4 c. nuts

Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide mixture into 32 balls. Roll in remaining cracker crumbs and chill.

These recipes look delicious don't they? Believe me, they taste even better too. So by combining sensible eating with regular exercise you can control and even beat your type 2 diabetes for good. It just goes to show that with a little research you can still eat the delicious types of foods and snacks that you did before.

It always seems like if you plant even one zucchini plant, you have enough zucchini to feed a very large family plus the neighbors. So, of course, there is then the question of what to do with all of that zucchini. It always amazes me that zucchini can taste so good in baked goods. Hope you enjoy these two baking recipes for zucchini!

Zucchini Granola Cookies

3/4 cup butter or margarine (softened)
1 1/2 cups brown sugar
1 egg
1 teaspoon vanilla
grated rind of 1 orange
3 cups grated, unpeeled zucchini
3 to 3 1/2 cups flour
1 teaspoon baking soda
1 cup butterscotch or chocolate chips
3 cups granola cereal

In a large bowl, mix together the butter and sugar. Mix in the egg, vanilla, orange rind, and zucchini. Add in the flour and baking soda. Mix in the granola cereal. Then mix in the butterscotch or chocolate chips. Grease a cookie sheet and put teaspoonfuls of the dough onto the sheet. Bake in a 350 degree oven for 12 to 15 minutes.

Chocolate Zucchini Bread

1 cup brown sugar
1 cup sugar
1/2 cup margarine
1/2 cup oil
3 eggs
1 teaspoon vanilla
3/4 cup buttermilk
3 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
2 1/4 teaspoons baking soda
5 tablespoons cocoa
2 1/2 cups grated zucchini
1/2 cup milk chocolate chips
1/2 cup raisins
1/2 cup chopped nuts (optional)

In a large bowl, mix the sugars, oil, and margarine together. Add the egg into the mixture one at a time. Mix in the buttermilk and vanilla. In a small bowl, sift together the flour, cinnamon, salt, baking soda, and cocoa. Add in the zucchini and dry mixture by alternating. Add in the chocolate chips, raisins, and nuts. Grease a 9x13-inch pan and pour the batter into it. Bake in a 350 degree oven for 1 hour.

Replace The Sugar
 
The first thing you need to do with your recipe is replace all the sugar in it.
 
To do this, you are going to need some sort of alternative sugar substitute. You will want to use a natural sweetener, not an artificial sweetener.
 
The problem with artificial sweeteners is that they can often have detrimental effect on your health, making them a sub-optimal choice for a substitute.
 
I always make sure to use 100% natural sweeteners to replace the sugar; I also make sure to use sweeteners that are safe for diabetics.
 
The two main sweeteners that I use are Agave Nectar, and Stevia. I find that I am able to make recipes that are on-par with their sugared counterparts!
 
To use Agave Nectar effectively, you will want to put in 1 cup of Agave to replace 1 cup of sugar (1:1 ratio).
 
For Pure Stevia (that has no filler; make sure you get a good brand!), you will use ¼ of a teaspoon for every cup of sugar.
 
I sometimes like to mix the two together. So if a recipe calls for 1 cup of sugar, I will use ½ cup of Agave; and 1/8 of a teaspoon of Stevia. This helps to keep the recipe from getting to wet (because agave is a syrup).
 
Do that, and you should be able to make the perfect sugar free cookie recipes.
 
Optional: Replace The Milk
 
A little bonus tip I'll throw in here for you:
 
If you replace any milk in your recipe with Almond Milk, you can make desserts that are perfect for people with food allergies!
 
Be sure to get the unsweetened almond milk; then sweeten it with Agave Nectar, shake it; and add more Agave until it tastes like regular milk.

How to Include Quinoa Seeds in Home Baking Recipes

There are many ways of including quinoa in your diet but one of the more unusual is to include it in baking. As far as I am aware this technique has been devised by me and I have never heard of anyone else using quinoa in this way. I stumbled upon it when looking for inspiration to spice up a simple cookie recipe I was about to make that had too much fat in it.

I wanted to reduce the fat content of this particular cookie recipe as I was trying to reduce fat in my diet at the time. The fat in the recipe was butter but I realized that quinoa seeds have oil in them so could be substituted for part of the butter.

The first thing to do is prepare the quinoa in the normal way using 1 part quinoa to 2 parts water. You bring it to the boils and simmer for about 15 minutes. You can cook it for less but for baking you need it to be quite soft to blend in with the other ingredients. The quinoa must absorb all the water as you do not want extra liquid in the mix. I there is remaining liquid turn the heat up to full and boil it off for a minute.

You reduce the butter content by half and slightly reduce the flour amount as well. you simple replace them with the same amount of prepared quinoa in the mix. The cooking time is the same as the normal recipe but you get a crunchier texture and taste to the cookies.

I have used this cooking method for cookies, biscuits and scones. It can take a little trial and error to get the proportions correct. It is a good way to reduce processed fats in recipes. The oil part of the quinoa works to replace the butter and the germ part replaces some of the flour. It is a bit of a balancing act but you will get it with practice

Weird and Wonderful Recipes Just For Fun

There have always been really strange recipes around that are passed from kitchen to kitchen until they fade and a new fad takes over. Usually they are perfectly edible, they may even taste quite good, but at least one ingredient is strange or used in a peculiar way.

Bacon Mugs

I found a version of this on Stumble. The resulting mugs make great containers for salads, rice etc. Use small ovenproof dishes upside down. These you cover with foil pressed well down. These you cover with bacon. I t is best if you cross two rashers over the upturned base and then wind one or two more rashers in and out to make a bacon basket. Cook these on a baking tray to catch drips. How long they take to become crisp will depend upon the bacon and your oven. A hot oven is best, but may produce some smoke. The bacon will shrink of course, but removed carefully from the foil after cooling and they should keep their shape. I must try this with vegetarian bacon, but these crisp up really quickly so keep a careful eye on them. Another idea might be to create a basket in a long, shallow dish.

Carrot Jam

This comes from a Second World War time book, so is really old. The fact that the recipe has survived this long must mean that it is worth making. Next time I make carrot cake I
will split it and spread it with some of this. I cannot give quantities as it depends upon how much mashed carrot you have.

Wash and peel your carrots. Chop them small and boil in slightly salted water until soft. Drain and sieve or chop finely in a food processor. To one pound of this pulp add on pound of sugar , 1 teaspoon of powdered ginger and the juice and grated zest of a lemon.

Boil all these together as when making any other jam. Pot when it begins to get thick.

Rose Petal Jam

My darling Granddad would allow me to pick his precious roses to make this. Some petals, especially white ones need trimming at the end where they join the flower as this part of the petal can produce a bitter taste.

2 mugs of rose petals packed fairly tightly, 2 1/2 mugs of sugar, 2 mugs of warm water, 2 tablespoons of honey, 1 teaspoon of lemon juice.

Cut the petals into 1/4 inch strips. Cover with the water and cook for about 10 minutes. Strain this, reserving the petals, and use the liquid to make a syrup with the sugar and honey. Boil and then simmer for 5 minutes before adding the petals once more. Then cook on the lowest possible flame for about 40 minutes- an asbestos mat helps with this recipe. Add the lemon juice and cook for a further 20 minutes. Pour into sterile pots and seal. Some would want to add a little colouring, but I am a purist and never do.

Jelly Fruit - Americans would probably call these Jello Fruit.

I remember these as a great treat at birthdays when I was a child. Somehow eating the jelly from out of a fruit shell made it taste better - at least in my imagination.

Each fruit will give you 4 portions. Halve your oranges. Remove all the flesh taking care not to damage the skins. Place the dry skins upright on a tray, or better still balance them in muffin tins which means that they stay upright more easily. Make up your jelly/jello a little thicker than normal and pour into the empty shells as full as you can as it shrinks a little when it sets. Place the tray in fridge and let set. Then cut each half shell once more so that the orange shell is now in quarters which make them much easier to eat. All you have to do now is to think of something to do with all that orange flesh. Now that my family is grown I wonder if it will work as jelly shots?

Ingredients

8 individual graham cracker tart shells 1/2 gallon vanilla ice cream 16 Oreo Cookies (crumbled) 16 red M&M candy pieces 16 pieces of black shoestring licorice

Directions

Lay out the shells on a baking sheet. Add 1 scoop of vanilla ice cream to each shell. In a bowl, crumble the Oreo cookies. Sprinkle the crumbles on each scoop of ice cream to create a black furry looking spider body. Put the filled shells in the freezer for 30 minutes or until ice cream is hardened. Remove from the freezer and press 2 red M&M's into the front of each scoop for the spider's eyes. Cut the licorice strips into fourths. Press 8 strips of licorice into each ice cream scoop to form the spider's legs. Return to the freezer until ready to serve.

Makes 8 servings

These simple little spiders are so easy make and the kids will love them. You can use any flavor of ice cream you want and different colors of M&M's for the eyes. Mix it up and give each guest a slightly different looking spider or flavor.

Kids Halloween Recipe #2 - Red Witches Brew Fruit Punch

This blood red punch will sure to quench the thirst of all the vampires attending your party.

Ingredients

3 (48 ounce) cans pineapple juice 1 (2 liter) lemon lime soda 1 large package strawberry or cherry flavored drink mix 1 can frozen strawberries 12 - 24 gummy worms

Directions

Place a gummy worm in an ice cube tray (1 in each tray). Fill with water and freeze. Mix all other ingredients together and chill. Once the ice cubes (with the gummy worms) are frozen, place in the punch and serve.

Makes about 1 to 1 1/2 gallons

You can make your witches brew even scarier looking by adding raisins and/or other frozen fruits.

Kids Halloween Recipe #3 - Coconut Munchable Scarecrows

These yummy scarecrows will brighten up your party with their bright clothes and tasty hat. Kids will have a blast frosting these little guys.

Ingredients

1 (18 ounce) package refrigerated sugar cookie dough 1 cup flaked coconut Yellow, orange, red and blue food coloring 18 gum drop fruit slices 1 can vanilla frosting 1 package mini chocolate chips

Directions

Roll out the cookie dough on a flat surface. You can flour the surface to prevent sticking. Use gingerbread men cutters and cut out 18 shapes. Place the cutouts onto a baking sheet and bake according the directions on the package. Remove the cookies and cool to room temperature on a wire rack. Using a small bowl, mix the coconut and yellow food coloring to achieve a straw like color. To make the scarecrow hats place the gum drops on a lightly sugared surface and press and roll them flat. Using a butter knife, cut hat shapes for each flattened gum drop. Place the vanilla frosting evenly into 3 separate bowls. Add drops of orange, red and blue food coloring into each of the bowls (one color per bowl). After the cookies have cooled, frost each cookie with the blue and red frosting making the shirts and pants. Make some shirts blue and pants red and with some shirts red and pants blue. Next frost the head, feet and hands with the orange frosting. Press your colored coconut into the hands and feet to form the straw. Place the hat onto the scarecrows head by placing a little orange frosting on the back of the hat and pressing it onto the scarecrow. Place 2 to 3 of mini chocolate chips down the front of the scarecrows shirt for buttons. Place chips on the head for the eyes, nose and mouth.

Makes 18 cookies.

These scarecrows will look so yummy that your guests will eat them quickly.

3 Easy Recipes for Camping Treats

The following recipes are ones you'll have to make ahead of time to take with you. See below for other recipes you can make while camping.

TRAIL MIX

1 c. granola cereal

1/2 c. salted sunflower kernels

1/2 c. salted roasted soy beans

1/2 c. chopped dates

1/2 c. raisins

You'll need: Medium bowl, wooden spoon, dry measuring cups, jar. In a medium bowl, mix cereal, sunflower kernels, soy beans, dates and raisins with a wooden spoon. Store in a jar or a plastic container with a tight lid. Makes 2 1/2 cups.

TRAILSIDE OATMEAL TREATS

1/2 c. margarine

1/2 c. peanut butter

1 c. sugar

1 c. brown sugar

2 eggs

1/4 c. milk

1 tsp. vanilla

2 c. flour

1 tsp. baking soda

1/2 tsp. salt

2 1/2 c. oatmeal

1/2 c. chocolate chips

1/2 c. raisins

Walnuts

Beat margarine, peanut butter, and sugars until creamy. Blend in eggs, milk and vanilla. Mix in all the rest. Drop by spoonfuls (make small) on cookie sheet. Bake at 350 degrees for approximately 14 minutes. Remove before they turn brown, underbake them.

JERKY

3 tbsp. liquid smoke

3 tbsp. honey

1 tbsp. season all

2 tsp. salt

1 tsp. garlic salt

1 tsp. black pepper

1 handful of thinly stripped beef or deer meat

Mix first 6 ingredients. Stir in meat. Place in a colander and set over another bowl to catch drippings. Let set 12 hours in refrigerator. Place meat on cookie sheets and dry in oven at 150 to 200 degrees with oven cracked open slightly. Heat until all moisture has gone from meat.

Drop this dough onto the hot apple compound and put it in the oven to be baked for 30 minutes till you see the crust has come to be golden brown. You can serve the dish along with whipped topping.

Cut the loaf in half lengthwise. Hollow out the middle of both halves. Take half the spinach dip and place in a bowl. Add yellow food coloring and blend in until you have the desired color. With the bread pieces taken from the middle, tear into small pieces and place all colse to the bread and serve. Tip: Add some cheese among the bread by using a small scoop and block cheese. Mince Pies are primary at Christmas, this recipe will make approx 12 pies.

250g Plain Flour
150g Cold Butter, extra for greasing
Cold water to mix, allow between 1 to 1 1/2 tsp per 25g of flour
1/4 Level tsp Salt
350g Mincemeat
Beaten Egg for brushing
Sifted Icing Sugar

Pre-Heat your oven to 190c/375f/Gas Mark 5.

For the pastry:-

1. Sift the flour and the salt into a bowl.
2. Add the butter, cut into the flour with a knife then rub with your fingertips. When rubbed sufficiently, the combination should look like fine breadcrumbs.
3. Sprinkle the water over the crumbs, mix to stiff crumbly-looking paste with round-ended knife.
4. Draw together with fingertips, turn out on to lightly floured board. Knead quickly until flat and crack-free.

Building the Pies:-

1. Roll out the pastry on a floured surface,using an 8cm round cutter stamp out 12 circles.
2. Grease your muffin tin and line with your pastry circles.
3. Using a teaspoon put equal amounts of mincemeat into each pastry case.
4. With your remaining pastry using a small star cutter cut out your stars.
5. Place your stars in the town of the pie and brush with a little beaten egg.
6. Bake in the town of the oven for 20-25 minutes (or until golden brown)
7. Take off from the tins and dredge thickly with sifted icing sugar.

The mince pies can be served warm, with whipped cream or custard, you could also decorate with other festive shapes depending on your cookie cutters.

Most Popular Christmas Cookie Recipes - Chocolate Drizzled Cherry Bars

2 cups all purpose flour

2 cups quick cooking oats

1 1/2 cups sugar

3/4 cup butter, softened

3 eggs

Authentic Corned beef and cabbage

Corned beef brisket, about 4 lbs.

1 juice orange

18-20 whole cloves

1 tsp. whole yellow mustard seeds

1/2 tsp. caraway seeds

1/2 tsp. whole black peppercorns

1/2 tsp. whole coriander

Put corned beef brisket into large pot for cooking. Take cloves and insert them, then sprinkle remaining spices on. Cover brisket with water, bring to boil, then simmer for 3 hours or until tender.

3 lbs. small potatoes, peeled

2 1/2 lbs. carrots, peeled and cut into large pieces

1 medium head cabbage

About 40 minutes before beef is finished, boil a large pot of water and cook potatoes and carrots. Add cabbage about 10 minutes before you're ready to serve as it doesn't need to cook long. Drain vegetables.

Arrange meat and vegetables on a platter and serve with your favorite mustards.

St. Patrick Day Cookie Pops (for the kids to make)

Box of Vanilla Wafers

Box of Popsicle sticks

Vanilla or chocolate frosting; or Peanut butter

Various decorations – chocolate chips, icing packs, assorted green candies, green sugar sprinkles, ju ju bees, sprinkles, etc.

Spread out ½ of the vanilla wafers, with the flat sides up on the plate. Take the vanilla, chocolate icing, or peanut butter and spread across flat surface. Next, take a Popsicle stick and lay it down with the end in the middle of the cookie. Top with another vanilla wafer to make a sandwich.

Now the kids can get creative! Turn the cookie pop into a green shamrock; apply vanilla icing and draw with green icing pack; make a pot of gold with candies; anything you want! They make a great treat for the kids to take to school!

Easy Hot Whiskey Punch (for the adults) Serves 1

1 measure of whiskey

2 teaspoons white sugar

4-6 cloves

2 slices fresh lemon

7 oz. boiling water

Put whiskey, sugar cloves and lemon slices into a strong glass. 2. Pour on the boiling water until the sugar has dissolved. 3. Sip contentedly by a blazing fire.

Irish Scones

1/2 cup butter

4 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup sugar

1 egg

1 cup milk

Note: You can add raisins, dates or other dried fruits, if desired.

Makes about 18 scones.

Preheat oven to 425°F.

In a large bowl, combine butter and flour until crumbly. Add baking powder, salt and sugar. In a separate bowl, beat egg and milk. Mix into dry ingredients to make a dough. Turn onto floured surface and roll to one-inch thickness. With a cookie cutter or the bottom of a drinking glass, cut dough into 2-inch rounds. Place on greased cookie sheet, about one inch apart and bake for 15 minutes.
